Fluffy Potato Dinner Rolls Recipe
Ingredients:
1/4 cup unsalted butter, melted
2 tablespoons sugar
1 cup mashed potatoes (from about 2 medium-sized potatoes)
1/2 cup warm milk
2 1/4 teaspoons active dry yeast (1 packet)
4 cups all-purpose flour
1 teaspoon salt
1 large egg, beaten (for egg wash)
Instructions:
Activate the Yeast: In a large mixing bowl, combine the warm milk, melted butter, sugar, and yeast. Let the mixture sit for 5-10 minutes until the yeast is foamy and activated.
Add Mashed Potatoes: Stir in the mashed potatoes, ensuring they are well-incorporated into the yeast mixture.
Mix in Flour and Salt: Gradually add the flour and salt to the mixture, stirring until a soft dough forms.
Knead the Dough: Transfer the dough onto a floured surface and knead for about 5-7 minutes until it becomes smooth and elastic.
First Rise: Place the dough in a greased bowl, cover with plastic wrap or a clean kitchen towel, and let it rise in a warm spot for 1-2 hours, or until it has doubled in size.

Shape the Rolls: Punch down the dough to release air. Divide it into equal-sized portions, shaping each one into a ball. Arrange the rolls in a greased baking pan, leaving space between each one.
Second Rise: Cover the rolls again and allow them to rise for 30-45 minutes, or until they have doubled in size.
Preheat the Oven: Preheat your oven to 375°F (190°C).
Apply Egg Wash: Brush the tops of the rolls with the beaten egg for a glossy finish.
