Zucchini Patties Recipe
Ingredients:
2 large zucchinis (approximately 300 g)
1 onion or shallot
1 garlic clove (optional)
Fresh herbs: flat-leaf parsley, mint, basil, or cilantro
1 egg
1 teaspoon of flour
2 tablespoons of liquid cream (dairy or plant-based)
Salt and pepper
Paprika, curry powder, Espelette pepper, or your preferred spices
Butter and/or oil for frying
Instructions:
Start by washing and drying the zucchinis. Grate them, then place them in a clean kitchen towel and squeeze out as much moisture as possible.
Finely chop the onion or shallot and your choice of fresh herbs.
In a bowl, combine the grated zucchini, chopped herbs, and onion. Add the cream and egg, mixing thoroughly. Finally, stir in the flour, salt, pepper, and spices.
Heat 20 g of butter along with a little sunflower oil in a frying pan. Spoon small portions of the mixture into the pan and flatten them into patties. Cook for about 3 minutes on each side until the patties turn golden brown.
Once done, transfer the patties to a plate lined with paper towels to absorb any excess oil. Serve them hot for the best flavor and texture.
