*INGREDIENTS
°225 g (1 1/2 cups) unbleached all-purpose flour
°5 ml (1 tsp) baking powder
°5 ml (1 tsp) baking soda
°310 ml (1 1/4 cups) ripe bananas, mashed with a fork (3 to 4 bananas)
°125 ml (1/2 cup) coconut milk (see note)
°15 ml (1 tbsp.) lime juice
°115 g (1/2 cup) unsalted butter, softened
°210g (1 cup) sugar
°1 egg
°5 ml (1 tsp) vanilla extract
*PREPARATION
Put the grill at the center of the oven. Preheat the oven to 180°C (350°F). Butter  23 * 13 cm (9 x 5 in) loaf pan with  capacity of 1.5 liters (6 cups) and line it with a strip of parchment paper, letting it hang over two sides.
In a bowl, combine flour, baking powder and baking soda. To book.
In other bowl, combine bananas, coconut milk also lime juice.
In a third bowl, cream the butter with the sugar using an electric mixer. Add the egg, vanilla and mix until the preparation is homogeneous. At low speed, add the dry ingredients alternately with the banana mixture. Divide the batter into the pan.
Bake for 1 hour or until a toothpick inserted in the center of the dough comes out clean.
Let cool on a wire rack before unmolding and slicing.
