INGREDIENTS
°2 kg (4 1/2 lb) apples, cored and sliced (about 16 apples)
°Juice of 1 lemon
°2.5 ml (1/2 tsp) ground cinnamon
°1 pinch ground ginger (optional)
°Sugar
*PREPARATION
In a saucepan, cook the apples and lemon juice for 10 minutes over high heat, stirring frequently.
In a food processor, reduce the apples to a smooth purée. Strain through a sieve and return to the same pan. Add the spices. Bring to a boil and simmer gently for 2½ to 3 hours, stirring frequently, until the mixture has the texture of softened butter.
Sweeten to taste.
Butter will keep in the fridge for up to two weeks.
