Ingredients:

2 1/2 cups all-purpose flour
1 teaspoon salt
1 cup unsalted butter, chilled and cut into cubes
1/4 to 1/2 cup ice water

Filling:

3 cups fresh strawberries, hulled and sliced 🍓
3 cups rhubarb, trimmed and chopped
1 cup granulated sugar
1/4 cup cornstarch
1 tablespoon lemon juice 🍋
1 teaspoon vanilla extract
1/4 teaspoon salt

Egg Wash:

1 egg
1 tablespoon water

Instructions:

Prepare the Pie Crust:

In a large bowl, whisk together the flour and salt.
Add the chilled butter cubes and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
Gradually add ice water, 1 tablespoon at a time, mixing until the dough comes together.
Divide the dough into two disks, wrap each in plastic wrap, and refrigerate for at least 1 hour.
Prepare the Filling:
