“Cheesy Herb-Crusted Chicken over Garlic Mashed Potatoes”
Ingredients:
- For the Chicken:
- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 teaspoons garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 eggs, beaten
- 2 cups breadcrumbs
- 1 cup grated cheddar cheese
- 1 cup grated mozzarella cheese
- Olive oil for frying
- For the Mashed Potatoes:
- 6 large potatoes, peeled and quartered
- 1/2 cup milk
- 1/4 cup butter

Instructions:
- Preheat Oven:
- Preheat your oven to 375°F (190°C).
- Prepare the Mashed Potatoes:
- Boil the potatoes in salted water until tender, about 15-20 minutes.
- Drain the potatoes and mash with milk, butter, salt, and pepper until smooth. Set aside.
- Prepare the Chicken:
- Mix flour, garlic powder, onion powder, paprika, salt, and pepper in a shallow dish.
- Dip each chicken breast into the flour mixture, then into the beaten eggs, and finally coat with breadcrumbs.
- Heat olive oil in a skillet over medium heat. Fry the chicken until golden brown on both sides, about 3-4 minutes per side. Remove from heat.
