“Cheesy Herb-Crusted Chicken over Garlic Mashed Potatoes”

Ingredients:

  • For the Chicken:
    • 4 boneless, skinless chicken breasts
    • 1 cup all-purpose flour
    • 2 teaspoons garlic powder
    • 1 teaspoon onion powder
    • 1 teaspoon paprika
    • Salt and pepper to taste
    • 2 eggs, beaten
    • 2 cups breadcrumbs
    • 1 cup grated cheddar cheese
    • 1 cup grated mozzarella cheese
    • Olive oil for frying
  • For the Mashed Potatoes:
    • 6 large potatoes, peeled and quartered
    • 1/2 cup milk
    • 1/4 cup butter
    • Salt and pepper to taste
  • Garnish:
    • Dried herbs (such as parsley or thyme)

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare the Mashed Potatoes:
    • Boil the potatoes in salted water until tender, about 15-20 minutes.
    • Drain the potatoes and mash with milk, butter, salt, and pepper until smooth. Set aside.
  3. Prepare the Chicken:
    • Mix flour, garlic powder, onion powder, paprika, salt, and pepper in a shallow dish.
    • Dip each chicken breast into the flour mixture, then into the beaten eggs, and finally coat with breadcrumbs.
    • Heat olive oil in a skillet over medium heat. Fry the chicken until golden brown on both sides, about 3-4 minutes per side. Remove from heat.

    • Spread the mashed potatoes in a baking dish.
    • Place the fried chicken breasts on top of the mashed potatoes.
    • Sprinkle the grated cheeses over the chicken.
    • Garnish with dried herbs.

    • Bake in the preheated oven until the cheese is melted and bubbly, about 20-25 minutes.
