White Chocolate Strawberry Cheesecake
Ingredients
Crust:
1 ½ cups crushed graham crackers
⅓ cup melted butter
¼ cup refined sugar
Filling:
450 g (16 oz) cream cheese, softened
1 cup melted and cooled white chocolate
½ cup granulated sugar
2 teaspoons vanilla extract
1 large egg
1 cup fresh strawberries, chopped
Topping:
½ cup fresh strawberries, chopped
¼ cup white chocolate chips, melted
Preparation
Preheat the Oven: Set your oven to 350°F (175°C).
Prepare the Crust: In a bowl, combine the crushed graham crackers, melted butter, and refined sugar. Press this mixture evenly into the bottom of a 9-inch springform pan.
Make the Filling: In a separate bowl, beat the softened cream cheese until smooth. Gradually add the melted white chocolate, granulated sugar, and vanilla extract, mixing until well combined.
Incorporate the Egg: Add the egg, mixing thoroughly after each addition. Gently fold in the chopped strawberries.
Bake: Pour the cream cheese mixture over the prepared crust and spread it evenly. Bake for 45-50 minutes or until set.
Cool: Turn off the oven and allow the cheesecake to cool gradually for about an hour.
Chill: Refrigerate the cheesecake for at least 4 hours, preferably overnight.
Serve: Before serving, top with additional chopped strawberries and melted white chocolate chips.
