Ingredients:

For the Base:

  • 1 1/2 cups graham cracker crumbs (or digestive biscuit crumbs)

  • 1/4 cup granulated sugar
  • 1/2 cup peanut butter (smooth or crunchy)

For the Filling:

  • 3/4 cup peanut butter (smooth or crunchy)
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract (optional)

For the Chocolate Topping:

  • 1 1/2 cups semi-sweet chocolate chips (or chopped chocolate)
  • 2 tbsp unsalted butter

Instructions:

Prepare the Base:

  1. In a medium-sized mixing bowl, combine the graham cracker crumbs, melted butter, granulated sugar, and peanut butter. Stir the mixture until it achieves a sandy consistency.
  2. Firmly press the mixture into the bottom of a muffin tin, small tart pans, or silicone molds using a spoon or your fingers. Refrigerate to allow the base to set while preparing the filling.

Prepare the Filling:

  1. In a small bowl, blend the peanut butter, powdered sugar, and vanilla extract (if using) until smooth and creamy.
  2. Once the base is set, evenly distribute the peanut butter filling over each cup, ensuring an even layer across the base.

Prepare the Chocolate Topping:

  1. In a microwave-safe bowl, combine the semi-sweet chocolate chips and butter. Heat in 30-second intervals, stirring after each, until the chocolate is fully melted and smooth.
