Slow Potato Broccoli Cheddar Soup
Ingredients:
1 onion, finely chopped
1 carrot, finely chopped
1 handful of celery, finely chopped
2 cloves garlic, minced
1 tablespoon butter
2.5 cups chicken broth
2 tablespoons flour
1 cup milk
2 potatoes, diced into small cubes
4 cups broccoli florets, chopped into small pieces
1 cup grated cheddar cheese
1 tablespoon grated Parmesan cheese
Preparation:
Prepare the Vegetables: Begin by finely chopping the onion, carrot, celery, and garlic in a food processor.
Sauté the Vegetables: In a large saucepan, melt the butter over medium heat. Add the chopped vegetables and sauté for about 5 minutes, stirring occasionally.

Thicken the Soup Base: Sprinkle in the flour along with a pinch of salt and pepper. Stir until the flour is well incorporated. Gradually add the chicken broth, followed by the milk and diced potatoes. Bring the mixture to a boil, then reduce the heat and let it simmer for 15 minutes.
