Braised Beef Short Rib Rigatoni
Ingredients:
2 lbs beef short ribs
Salt & black pepper
2 tbsp olive oil
1 chopped onion
1 chopped carrot
1 chopped red bell pepper
4 minced garlic cloves
1/2 cup tomato paste
1 can (28 oz) crushed tomatoes
1 cup red wine
Fresh thyme, oregano, and bay leaves
1 lb rigatoni
1 cup shredded mozzarella
Fresh basil
Instructions:
Preheat oven to 300°F. Sear short ribs.
Sauté veggies, add tomato paste.
Deglaze with wine, add tomatoes and herbs.
Braise short ribs for 3 hrs.
Blend sauce, shred ribs, return to sauce.
Cook pasta, mix with sauce and ribs.
Garnish with mozzarella and basil.
