°340 g ( semi-lean beef
°375 ml (1 1/2 cups) cooked white rice
°2 celery stalks, diced
°2 bell pepper
°375 ml (1 1/2 cups) organic Nordic cheddar from Fromagerie Perron aged 2 years, grated
+Also provide:
°30 ml (2 tbsp.) olive oil
°1 chopped onion
°1 beaten egg
°10 ml (2 tsp.) minced garlic
10 ml (2 tsp.) fresh thyme
Preheat oven 205°C (400°F).
In a skillet, heat the oil over medium heat. Cook the beef and onion for 2 to 3 minutes, until the meat has lost its pink color. Let cool.
Add rice, egg, celery, garlic and, if desired, thyme.
Cut the peppers in half. Remove seeds and stuff with beef mixture. Place in a gratin dish and cover with cheese.
Bake for 25 minutes.
